Chocolate Shakeology Protein Waffles

Makes: about 4 Belgian-style waffles
Prep: 5 minutes
Cook: 10–15 minutes
Ingredients
1 scoop Chocolate Shakeology
1 cup oat flour
1 tsp baking powder
Pinch of salt
2 large eggs
¾ cup unsweetened almond milk, plus a splash more if needed
½ cup plain Greek yogurt
1 tsp vanilla extract
Cooking spray or a little butter for the waffle iron
For Serving
This is where the photo really sells it:
Sliced banana, Strawberries or whatever fruit you choose
Chopped almonds
Drizzle of pure maple syrup
Crispy bacon on the side
Directions
Preheat your waffle iron and lightly grease it.
In a medium bowl, whisk together the Chocolate Shakeology, oat flour, baking powder, and salt.
In another bowl, whisk the eggs, almond milk, Greek yogurt, and vanilla. Pour the wet ingredients into the dry ingredients and stir just until combined. The batter should be thick but pourable. If it gets too thick as it sits, add almond milk a tablespoon at a time.
Spoon the batter into the hot waffle iron and cook according to your waffle maker's directions, until the outside is crisp and the center is cooked through.
Top with sliced bananas (fruit of choice), chopped almonds, and a little maple syrup. And yes...add the bacon. The salty bacon with the chocolate, banana, and maple absolutely belongs there.

These are one of those breakfasts that feel way more indulgent than they actually are. The Chocolate Shakeology gives the waffles that deep chocolate flavor, while the Greek yogurt and eggs make them hearty enough that you're not hungry again 20 minutes later.
